Disable projection for 360 video

This is essentially the opposite of #18536

We want to be able to force PROJECTION_MODE_RECTANGULAR for a properly tagged 360 source video, ideally from the LibVLC C API.

This will allow properly mapping the texture frame on a sphere in 3D game engines (see vlc-unity#129 (closed)). Cubemaps may be interesting as well.
