configure: allow 'strings' override via STRINGS variable

This allows building x264 on systems where 'strings' or '${HOST}-strings' does not exist, but llvm-strings exists.

Looks ok but need to be rebased. Also commit message should be changed. It should be:

configure: allow 'strings' override via STRINGS variable

i.e. without x264/

Also allow pushing to your branch in merge request so we can rebase it ourselves.
