swscale: set colorspace information to swscale context

Colorspace most cases default with swscale, but it shouldn't hurt to define it if possible.

I didn't have any easy to see source/conversion flows in hand to see if there is big difference, so validation is more based on ffmpeg/swscale documentation than output based.
