Various issues with converting
I converted one of my video files using all of VLC's default profiles to find any bugs, and then wrote a document with each of the issues for each profile.
I was planning on attaching an archive containing the original video, all of the converted versions, and the results document, but it is too big. Instead, I will attach the video what I converted, and the results.
Results
Results of converting _original.mp4 using all of VLC 3.0.18's default profiles
The files are tested with Windows 11's Media Player (hereafter referred to as WMP) and VLC Media Player 3.0.18 (hereafter referred to as VLC). I included WMP to narrow down which issues are with the files and which are with the players.
Video - H.264 + MP3 (MP4)
Note: Despite having "MP3" in its profile name, this profile actually uses MPEG audio.
WMP: Video plays without any audio.
VLC: At the start, the audio plays without video. Around 00:07, the video appears, first as a still frame, then as the normal video. The audio cuts out around 0:22.
Video - VP80 + Vorbis (WebM)
Plays correctly on both WMP and VLC. Has the timestamp issue, but this has already been solved on the dev branch, so you needn't worry about it.
The file has no thumbnail in the file explorer.
Video - H.264 + MP3 (TS)
Note: Despite having "MP3" in its profile name, this profile actually uses MPEG audio.
WMP: Stutters at the start. Otherwise, plays correctly if the user does not change the progress bar, until around 00:22, at which point the audio cuts out early. If the progress bar is changed, the player jumps to a seemingly random timestamp, and the video can sometimes fully become a grayish gradient-like thing.
VLC: Same as WMP, except it does not jump to random timestamps, and, instead of sometimes becoming a gradient, it always becomes a still frame of the video from the timestamp clicked.
Video - H.265 + MP3 (MP4)
Note: Despite having "MP3" in its profile name, this profile actually uses MPEG audio.
WMP: Requires purchasing a codec from the Microsoft Store to view, which I am not doing.
VLC: Audio cuts out around 00:22.
The file has no thumbnail in the file explorer.
Video - Theora + Vorbis (OGG)
WMP: There are so many artifacts.
VLC: Plays normally.
The file has no thumbnail in the file explorer.
Video - MPEG-2 + MPGA (TS)
WMP: Plays normally.
VLC: A gray bar sometimes flashes at the top of the video. Audio cuts out around 00:22.

Video - Dirac + MP3 (MP4)

This just crashed VLC when I tried to use it. It only got to write to the output file partially, so the file is corrupt and doesn't play.
The file has no thumbnail in the file explorer, and it's pretty understandable why it doesn't, given what I just said.
Video - WMV + WMA (ASF)
Both: The video has huge colorful artifacts covering things what do not move much, and some areas sometimes get warped and moved to places they should not be. It's almost impressive how bad it looks.
VLC: Video starts at 00:02, for some reason. I can't move the progress bar any earlier than that.
Video - DIV3 + MP3 (ASF)
Note: From this point onward, MP3 actually is used when its name is in the name of a profile.
Same as WMV + WMA, but the artifacts are not extremely colorful this time. Instead, they actually resemble parts of the previous frames, like normal artifacts.
Audio - Vorbis (OGG)
No issues.
Audio - MP3
No issues.
Audio - FLAC
No issues. WMP doesn't allow changing the progress bar for this, but that's not really VLC's problem, now, is it?
Audio - CD
No issues.
Video - MPEG4 for 720p devices
I'm ignoring the aspect ratio changes for the remaining videos because that's probably part of why the profiles exist in the first place.
Both: Audio cuts out around 00:22.
Video - MPEG4 for 1080p devices
Same as above.
Video - DIVX-compatible devices
Both: Lots of artifacts.
Video - iPod SD
Both: Audio cuts out around 00:22.
Video - iPod HD / iPhone / PSP
Both: Audio cuts out around 00:22.
Video - Android SD Low
Both: Audio cuts out around 00:20 this time. What a change!
Video - Android SD High
Both: Audio cuts out around 00:22.
Video - Android HD
Both: Audio cuts out around 00:22.
Video - YouTube SD
Both: Audio cuts out around 00:22.
Video - YouTube HD
Both: Audio cuts out around 00:22.
