Unable to convert / Save to Video - H.264 + MP3 (MP4) on VLC 3.0.11 (but works on 3.0.4)

Complete logs as those from the messages dialog, verbosity to 2 (GUI mode) or the -vvv switch (CLI mode) :
It seems that VLC crashes at the end of the process so I could not keep al of the logs (a few lines were added just before the crash, I cannot get those). You'll find the logs that I have in the log file enclosed.
The exact steps to reproduce the problem :
Open VLC
Clic on Media > Convert / Save
Clic on Add and add a MP4 that you want to convert.
Clic on Convert / Save
Write the name of the destination file.
Select the profile "Video - H.264 + MP3 (MP4)"
Clic on Start to start the conversion.
At the end of the conversion, VLC crashes and the file that has been written is not readable by VLC.
I've installed the version 3.0.4, realized the same steps and it works on 3.0.4.
The problem happens all the time.
Type of file : MP4 video file.
Code: H264 MP4
Resolution : 1080 x 1080
Frame rate : 59.9
If the bug is a crash or lock-up/freeze, the complete threaded symbolic stack trace of VLC at the time (see also below) :
There was no file in the crashdump folder.
